Ingredients:
- 1kg rock salt
- 1 sea bream
- 2 eggs
- 1/2 lemon
- Thyme and rosemary
Instructions:
1. Preparation:
- Place the lemon and herbs inside the belly of the sea bream.
- In a bowl, combine the rock salt, thyme, rosemary, and grated lemon peel.
- Add the egg yolks to the mixture and mix everything together.
2. Assembling the Brick:
- Place your sea bream in the brick.
- Completely cover the sea bream with the salt paste mixture.
3. Final Cooking:
- Preheat the oven to 180°C.
- Cook the fish for about 20 minutes without the lid. The salt paste should turn golden and hard. You can test it by tapping it with a spoon.
