Herb Butter Mussels

🧱 Bricknic Recipe: Herb-Butter Mussels Cooked in Clay

There's something magical about cooking outdoors—with friends, over fire, using just natural ingredients and clever tools. This recipe brings it all together. Using the Bricknic cooking brick, we’ve created a delicious, fire-baked mussel dish layered with fresh herbs, onions, and a generous dollop of zesty herb butter.

Whether you're cooking at a campsite, your backyard, or a beach bonfire, this recipe is a flavorful celebration of communal cooking.

🧑🍳 Herb-Butter Mussels in the Bricknic Cooking Brick

Serves: 2
Prep time: 10 min
Cook time: 20–25 min
Skill level: Easy

đź›’ Ingredients

For the base:

  • 500g fresh mussels (cleaned and debearded)

  • 1 medium onion, thinly sliced

  • 1 leek, sliced (white & light green parts)

  • 2 garlic cloves, minced

  • Juice of ½ lemon

  • Salt & pepper to taste

  • Optional: chili flakes for a kick

For the herb butter topping:

  • 2 tbsp softened butter

  • 1 tsp fresh or dried parsley

  • 1 tsp dill (or herb of choice)

  • ½ tsp garlic powder (or fresh minced garlic)

  • Zest of ½ lemon

🔥 Instructions

  1. Make the herb butter:
In a small bowl, mix the softened butter with parsley, dill, garlic, and lemon zest. Set aside.

  2. Layer the Bricknic brick:
In the base of your Bricknic cooking brick, add the onion, garlic, and leek slices. Place the mussels on top and season with salt, pepper, and a splash of lemon juice. Add chili flakes if desired.

  3. Top with herb butter:
Spoon the herb butter generously over the mussels.

  4. Close and cook:
Cover the Bricknic with its top half and place it over hot coals or a grill. Let it cook for 20–25 minutes. The mussels will steam gently inside the clay, absorbing all the rich flavors.

  5. Serve and enjoy:
Carefully remove the brick from the fire, open it, and serve immediately. Discard any unopened mussels. Pair with fresh crusty bread and your favorite white wine or lemonade.

đź’¬ Why We Love This
