1 medium onion, thinly sliced

1 leek, sliced (white & light green parts)

For the herb butter topping:

2 tbsp softened butter

1 tsp fresh or dried parsley

1 tsp dill (or herb of choice)

½ tsp garlic powder (or fresh minced garlic)

Zest of ½ lemon
🔥 Instructions

Make the herb butter:
In a small bowl, mix the softened butter with parsley, dill, garlic, and lemon zest. Set aside. -
Layer the Bricknic brick:
In the base of your Bricknic cooking brick, add the onion, garlic, and leek slices. Place the mussels on top and season with salt, pepper, and a splash of lemon juice. Add chili flakes if desired. -
Top with herb butter:
Spoon the herb butter generously over the mussels. -
Close and cook:
Cover the Bricknic with its top half and place it over hot coals or a grill. Let it cook for 20–25 minutes. The mussels will steam gently inside the clay, absorbing all the rich flavors. -
